I actually modified this from a recipe I found on allrecipes.com The night before, I had prepared my usual pancake batter from an instant pancake mix and included 2 bananas. For some reason, it came out watery and produced these awful soggy pancakes (blaugh!), so I did a quick search and found this recipe. In my experience, I've found that a one to one ratio of wet to dry is too wet for pancake, especially if you're going to add fruit on top of the liquid asked for. This is what I came up with.
Makes about 5-8 pancakes
Ingredients:
2 ripe bananas, well mashed
2 tbsp veg oil
1 egg, beaten
1/2 c milk
1 c plus 2 tsp self-rising flour
or
1 c a/p flour with 2 tsp baking powder
1/8 tsp salt
1 tbsp sugar
Combine bananas, veg oil and egg in the bottom of a medium bowl until well incorporated. Mix in milk and set aside. Sift in dry ingredients directly into wet and mix from bottom to top until dry is just wetted through. Let sit for at least 10 minutes before cooking on a griddle set over low heat.
